Hudson’s employs the largest and one of only two remaining fishing fleets on Hilton Head Island, bringing fresh local seafood straight from our docks to your table. Share the excitement as our crews unload thousands of oysters, shrimp and soft shell crabs from the day’s catch. Fresh, Local Hilton Head Seafood
We work with fisherman in Charleston, Georgia and northern Florida to get fresh catches such as swordfish, mahi mahi, grouper, tile fish, trigger fish, vermilion snapper, and black sea bass. All of our fish is processed in-house and added to the daily lunch and dinner specials.
In the Spring, we have a soft shell crab shedding operation at the Hudson’s restaurant. Shedding boxes are constructed in the packinghouse with a water circulating system to facilitate and manage the molting process. Once the crabs back out of their shells, they are immediately removed and served at the restaurant. Last year we shed out over 2,300 crabs.
